Everto Guerrero Nuñez is the farmer behind El Palo Santo (the name of his farm). He is part of the La Jalca community in San Ignacio, Cajamarca, where he grows on just one or two hectares, making this lot is extremely small. Nuñez is part of the Rio Blanco producer group along with just 16 other coffee producers in the community. Grown at 1600-1800 masl with primarily Bourbon, Caturra, and Catimore varietals, this coffee gave us a nice big malic acidity (apple-like) and great sweetness, reminding us perfectly of a caramel apple.
