Diego Samiel Bermúdez has been working with his neighbors in Cacau since 2017 to push the limits of processing. His experimental ideas about how to raise the quality of coffee have caused him to be a semi-celebrity and shining light in the coffee processing community.
We have been lucky enough to snag a few boxes of one of his more exciting coffees in this Anaerobic Washed offering. By allowing the cherries to ferment for a short amount of time in a vacuum-sealed vat, the natural sugars in the cherries come through with wildly potent and identifiable fruits. This is an extremely difficult process, but Diego and his team achieve an impressive amount of consistency with it, and we are happy to be able to showcase his hard work, and reward his bravery in searching for new approaches to an age-old industry.
